I've ridden the A68 and I quite like that road, especially around Carter Bar and Jedburgh.
It is hilly. Big and pretty steep. If you rode the A30 on your End to End, then it's a good idea about how the A68 is, but with much less traffic. I don't like the A30 west of Exeter, it's an unofficial motorway. I've ridden the A68 on 53/17 fixed on my way home from the Daylight 600, but it wasn't easy.
Definitely avoid the mess around Newcastle and Middlesborough. :sick:
North York Moors are very nice. Going north/south tends to be easier than east/west.
I'd keep east of York unless you fancy visiting York and stay east thereafter through Lincolnshire Wolds, crossing the Humber Bridge (follow Sustrans Route 1 signs) and heading to the lanes. Then I'd head for west of the A15 after Sleaford, through Rutland via Oakham then Northants and into Berks via the Chilterns.

When I did my end to end (yeah I used the A30, I thought it was absolutely fine), it was really easy because I didn't really have to plan a route, I just used the one in a little green book.
Unfortunately there is no little green book that goes from Edinburgh to my house via the east coast seaside!!! I'm not very good at this sort of thing so I guess I'd better learn!
