How late can we still pick and eat rhubarb?

Our rhubarb is looking good at the moment - having been away it has not been picked - but can we still eat it or does it go tough later in the season?

My understanding is that you don't pick it after 'midsummer' (when ever that is) to give it a chance to build up the rootstock for the winter.
But it's a pretty tough plant so a little 'pruning' probably wouldn't hurt too much.
