A salmon crumble - what you think?
« on: 14 October, 2010, 02:05:18 am »
I have a mass of gram flour so was thinking maybe to have a salmon crrumble.

Gram flour and butter but no sugar just a bit of ginger and some chili powder and flakes for the salmon.

Am I doomed to failure?

Never ruin Salmon by putting it in stuff apart from maybe a sauce.

Pan fry it, steam it whatever just don't turn it into some school dinner from hell.

Fish crumble.

Tinned Salmon, you say?

Don't waste it on a crumble then. Save it for a dinner party when you are out to impress!

Make a tomato sauce, mix in the tinned salmon and pour in an even layer into a small oven-proof dish.

Top with either thinly-sliced potato or well-seasoned breadcrumbs, drizzle some olive oil over the top and bake in the oven.

I know a great recipe for drunken salmon - a whole salmon fillet marinaded in whisky, orange juice, soy sauce and olive oil and then baked.

I think it may suffer from being a bit on the dry and 'clammy' side, a bit like a Pork Pudding would. You need some sauce preferably spicy or with a bit of a kick to it.
One of my favourite meals used to be pan fried salmon with lots of caramelised ginger.

If you put it in white sauce and maybe add some cheese to the topping - it'll be quite similar to the taste of fish pie, and pretty nice, I'd think.

Some veg - carrot and peas? - in there too?
