extra click on my 10 speed Shimano 105 biffers

my 10 speed 105 biffers seem to have 10 clicks in their range, which is one more than they need. Can I use this to run an 11 speed cassette perhaps by attaching the cable the other side of the pinch bolt or some such trickery.

what is the model number on the shifters (usually under the back of the hood)?

that shifter should have nine clicks, each of which pulls about 2.3mm cable.  A tenth click is a bit of a mystery, but I'm not sure  it will do you much good if it does exist and it pulls another ~2.3mm cable; the reason is that shimano 11s shifters pull ~2.7mm cable and use an RD with a different shift ratio too. Furthermore 11s sprockets are spaced slightly differently too.

If you can measure the cable pull for each click maybe it will become clear(er) what is going on.
