Is there an option in Thunderbird to re-fetch all the emails from the Gmail web inbox and sent items?

Yes.  Kind of

You have to set up T-bird to pick up G-mail - which is an option when you set up a new account.  Then in G-mail you have to enable POP3 mail (in settings) and specify that it applies to all mail - not just from now on.

I set it up as IMAP rather than POP and all the emails have been picked up now.

What are the pros and cons of IMAP vs POP anyway?

Seems to work fine, if perhaps a little slower to fetch / send mail and to put a copy on Gmail itself.
