Nice in a simple curry, with chickpeas and spinach or kale.
Or sprouts. Potato and sprout curry :P

Mmm lamby potatoes

My final meal would be roast leg of lamb on boulangère potatoes. It's a classic combination for a reason.

Which as it happens I cooked yesterday, shoulder FTW.

and.... Patatas Bravas! (aka chips with a bit of decent gravy)

On top of cottage pie.

That's the way I have been doing them, i make up a big batch of filling, and of mashed spud, freeze the two separate. Then defrost, put in dish in correct orde. Bake until smoke alarm goes off. Serve.

But it's not exactly a quick process, even tho it is an easy one.

If you make Duchess potatoes you can freeze them and unfreeze individually. Same for hash browns, make a big batch and unfreeze a couple at a time.

Do you freeze them before going in the oven, or after ? How do you stop them drying out when you reheat? I like the idea, would allow for effective portion control.

I've never tried but this says before cooking.
All that butter and egg keeps them delish.

I've just been learning a bit of Dutch, and looking up recipes for stamppot. Its a similar thing to bubble and squeak / colcannon / champ etc.
Except often made with endive or sauerkraut, instead of cabbage. Or some versions with apples or pears. I'll try making some.

Potato scones can be cooked (oven, fry or grill (I assume, we don't have one)) straight from the freezer. I like them with a fried or poached egg (this may not be authentic, I don't care).
Make a batch of potato curry and freeze that in portions?

Make mash. There's no upper limit.

What's the best way to reheat frozen mash ?

It can tend to be very watery when you first defrost it - but not to worry.  Put in a saucepan with a small knob of butter and a dash of milk (do do make your mash with butter and milk I hope...) and stir whilst heating gently. Works a treat.

As to other uses - dauphonoise or boulangere are both nice.

Or oven chips of course - slice into wedges / chips of your chosen size, mix in a bowl with salt, oil and maybe some cornflour, bake a high heat (220C) for 15 minutes or so, then get them out and toss them about a bit, seasoning if required (smoked paprika is nice). and finish off for 10  minutes.

What a Chinese friend of mine calls sticky chips. They actually taste interesting, but it messes with your head.

They do sweet and sour noodles, but the noodles are shredded potato. That's quite good.

Yes. Hash browns were invented by McDonalds, clearly inspired by the Latke, but a hyper commercialised version

Not sure about that. https://en.wikipedia.org/wiki/Hash_browns But latkes in turn are not quite identical to placki ziemniaczane, there must be dozens of variations.

My Flemish grandmother's stamp was potato and carrot mash.

I get a yen for this from timed to time: cooked (boiled or zapped) spud and carrot, well-mashed with much butter and milk, seasoned with salt and pepper ± nutmeg.

I'm glad to see that we are all being sensible & not suggesting potato based alcohol projects... 


I've recently being enjoying Daupinoise potatoes with lots of Gruyere. Last nights meal was parboiled potatoes fried with onions, bacon & diced black pudding.  Lovely, but bad for the waistline.
