I was given a huge block of feta in November. Great, thanks, I said. I'm OK with feta, but I do find it rather salty. I certainly didn't want to throw it away, so kept on having a bit now and then, thinking that eventually it would go off.
However, what I noticed, as 4 weeks turned to 6 weeks and more, was that it was getting nicer and nicer, turning more into a kind of strong blue cheese taste without the blue. Now I'm rather sorry it's come to an end!
