Anyone have a tried & tested fudge recipe?

Double cream, or condensed milk?

Rum & Raisin is the best, right?   ;)

chocolate fudge  :thumbsup:

8oz soft brown sugar, 1 level tbsp chocolate (cocoa) powder, walnut sized knob of butter and 6 tbsp milk
heat on low setting, stirring all the time (wooden spoon)
boil for exactly 5 minutes, stirring all the time
take off the heat (you can turn it off now) until it stops bubbling
beat until it thickens to a treacle consistency
pour into warmed* buttered tin

*it cracks if put into a cold tin, same taste but not fudge consistency

my friend introduced me to fudge from the Toffee Shop in Penrith - melt in the mouth

Agreed.

But "Tablet" is faaaaaaaaaaaaarrrrr worse............ (thankfully doesn't seem to make it south of the border). When I worked in Glasgow a few years ago, one of the ladies in the office made Tablet which was apparently really good, all I can say is if that's good then I really, really don't want to taste bad Tablet.

I LIKE tablet but was dismayed when some overpriced confection D bought went MOULDY before we had eaten it all...
