Replacing a seven speed cassette with an 8 speed cassette on a road bike

Is it a straight swap after removing the spacers on the hub from the seven speed cassette or is it a replace the hub sort of thing?

Maybe. If it is a seven speed block on an eight speed hub (and a spacer or two) then it is a straight swap. If it is eight of a nine speed block on a seven speed hub then it is a straight swap.

If it is an 8 speed in place of a 7 speed then you will need an 8/9 speed hub. You can do this by either
a) getting a new wheel,
b) replacing the exisiting hub with a new one (rebuilding the wheel)
c) swapping the freehub for an 8-speed one and redishing the wheel.

bear in mind that any of the above options will probably change your OLN dimension (width of the hub) so may require either a bit of effort to fit the wheel, or bending of the frame a little (if a steel frame).

As David says:

A spacer can be used behind the cassette to use a 7 speed on 8/9/10 speed hubs.   If yours is one of those then an eight speed of compatible type should just slide on when cassette and spacer are removed.   If however your hub is a genuine 7 speed hub then your 8 speed cassette aint gonna fit.  Sorry.  :(

If the latter you'll be in to one of David's options.

You have another option. You can use a 9 speed cassette, remove one spacer and sprocket and it will fit on a 7 speed hub. Shimano only. You'll need 9 speed shifter too.

Depends. If you have a mountain bike then it could be 130mm OLN for 7 speed and 135 for 8/9/10
or 126mm for 7speed road and 130mm for 8/9/10 road.

Though my MTB seemed to go from 7 speed to 8 without any problem with OLN issues

OLN== over lock nut, the distance between the outer faces of the nuts that hold the hub together.
