Can it actually record rides as well as navigate, and can it do both at the same time?

If so how do you set it recording please?

Track recording is automatic (unless you've turned it off or the GPS has no satellite).

From the main menu, Tracks > On.  The Setup button allows you to choose how fine the log is (Normal is fine, Most Often is good for detail mapping, Least Often is a battery and memory saver).

Also ensure you have it set up to record the max possible (10,000) points; it is lower than that by default IIRC.
