There's also an Egyptian dish found in other Arab countries as well called Kitchree which is similar but has brown lentils and not smoked fish.

I had a delivery of 18 kippers, and 4 sides of smoked salmon last night.  Half of which is going to friends.

Couldn't stomach a kipper this morning (they are strong Mallaig ones) but will be having it for dinner!  :thumbsup:

This thread is interesting, because of the confusion about just what kedgeree should be. Clarion is exactly right. It's a Victorian Raj thing, brought back to Blighty.

You need good smoked Haddock, Basmati rice, lots of butter, and a collision of Victoriana and India. Cumin, coriander and English breakfast stuff.

Spices and a creamy poached egg on top! Buttery lovely Victorian stuff!

It's seldom that I disagree with you, Mr Gates, but kedgeree is vomit from the last leper in hell.

My old flatmate used to make kedgeree.  Stank the place out something horrid it did  :sick:

Midland MainLine (or whatever they're called this week), the Midland Express (now 0801 ex Derby) still does Full English Breakfast, cooked on board.

Cornflakes, Juice.
Sausage, Bacon, Black Pudding, Tomato, Fried Egg, Fried Bread, Mushrooms, Fried Potatoes.
Toast.  Lots.
More Coffee than the mind can comfortably boggle.

But it's only for First Class.  So I can't indulge when travelling for work.  My All-Stations Pass is only for personal and leisure use.

I often serve it as late supper dish, for hungry friends. This is quite correct, and is a good excuse to open a bottle.

Kedgeree is not 'curry'.

It is, when well prepared, a composite dish, light and elegant, but rich enough to make you think you are truly priviliged. You can imagine you are in a different place.

Trains? I remember travelling on the sleeper to Edinburgh, first class, on my way back home, twenty five years ago. Kedgeree was sometimes on the menu, along with a interesting meetings in the corridor. I met some of our most famous politicians on this journey!

Following a couple of replies on here I have a plan. For a ride.

Arrive. Around 7:00. Meet and greet stuff, then sort out kit, etc.

Ride

For about 10 minutes, maybe 15.

Have a breakfast.

Rest.

Possibly go out for another ride at about 16:00, if you can be bothered.
It is simpler than it looks.

Basically: cook some smoked mackerel in milk or water, reserve the liquor.  Flake the cooked fish.
Cook some basmati rice until almost done.
Hard boil some eggs.  Quarter them.
Chop and fry an onion in butter and a splash of oil.  Add garlic and ginger if you like.
Once the onion is softened add the rest of the ingredients, along with some of the fishy liquor.  Add peas and some curry spices.  Turmeric is necessary.  Garam masala is a good "catch all".
Once the peas are cooked and the rice is soft, serve.  Eat.  Smile! :)

Edit: replace the mackerel with smoked haddock or any smoked white fish.  Buy good quality smoked fish, non of that dyed yellow rubbish!
