What would you make with 16 pints of milk with the sell by date of today? Something that will last frozen or in the fridge.

Pasteurised, so is it possible to make anything but some sort of fresh cheese using lime juice.

Given you always get a day or two past SBD with milk porridge, porridge and more porridge. Think abney and teal (will only make sense if you have young kids) levels of porridge

Allegedly you can make mozzarella with lemon juice. Or mexican cheese with lime juice but then what do I do with it?

No, I declined more.

the reason I have the milk is that collected some milk from waitrose to donate to church that delivers warm drinks to those out on the streets. But the church memberwho does this is not offering the service for a few days, so have lots of milk and no idea what to do with it.
Next time, don't get involved :facepalm:

So tomorrow, Im going to make buttermilk to drown some chicken in for a few dinners.
Might try and make some fake mozzarella as I have a ricotta pot.
Or make ricotta for spinach and ricotta cannelloni, topped with fake mozzarella. Some cooked and some raw in to the freezer....oh no space in the freezer. Fuck.

My wife cuts it into cubes pre-fries it, for Indian food, then stores it in the freezer.

Now that just sounds wrong to me, but then so does freezing milk and cheese so what do I know.

Whe we did out cheese making course, they suggested using it as stock for soups and the like.
It will also freeze.
What actually happened was that it lurked in the bottom of our freezer for ages, then got thrown away. :-\

Use the whey to make scones, I don't often have access to whey, but when I make scones with it they are exceptionally good.

So I used the whey to make béchamel sauce, heated with onion, cloves and bay leaf. Then I added the false buttermilk that some chicken was soaking it.
It was lush over butter fried leeks.

I also use buttermilk for scones. Is whey not prized by body builders & athletic types for protein?

I make my scones with manky milk. It doesn't take much though, 16 pints is a lot. I'd probably do a reverse walk of shame and doorstop deliver it to some neighbours.

Off milk is makes the best egg custard.
