Heh. I think the River Cottage Bread Book has a recipe, but I've no idea whether it's authentic. By chance I came across a pack of oatcakes in the reduced aisle at my local supermarket today, so I had cheese and oatcakes for my tea.

Recipes tend to be closely guarded family secrets handed down, but the real secret is the right griddle temperature for your recipe. Frying pans don't really cut it.

Thanks Si - that recipe looks similar to the one in my book. I've got a very heavy cast iron frying pan, so will have to give this a go.
