I am aware of AI.
Even my fairly basic washing machine assesses 'wetness' and ads water when appropriate.

Breadmakers are pretty impressive really.  It's all open-loop apart from temperature, and the whole process hinges on the cunningly-shaped ridges on the sides of the bread tin.
