What size tyre will fit

How can I tell what size tyre I can fit on the rim. I've got a set of wheels that came with 700x23 but these are going to get used on a new project tourer so would want a wider tyre. I'm assuming that there must be a maximum width across the bead that can be fitted.

rim width for tyre sizing purposes is measured internally, here's the chart of mavic's recommended rim/tyre sizes:
