I don't think I can improve upon this. Used Shipton Mill Canadian Strong to which I had to add extra water because it was so strong. Thought it would end up chewy but it is absolutely perfect. Handstretched in plenty of semolina. Sauce is Mutti Pizza Sauce (available from Waitrose). A massive handful of parmesan, sparse buffalo mozzarella, anchovies, jalapeños, some tart Welsh blue cheese and a drizzle of olive oil.  Pepper and basil on post cooking.

Now stuffed.  Sourdough going in when oven cools a bit

You laugh, but two of his siblings live with 7 miles of me.
.Sourdough was a semi disaster. Dough too wet and it didn't take shape. It will probably taste good though.
