Blurry eyed and lacking in caffiene, at 6:50 this morning I set about trying to work out just what I was going to make for lunch for myself and Mrs T.
I got the Polenta out of the fridge (I made that last night)
Cooked in on a griddle whilst I rummage in the fridge and cupboards, from where I found:
1 tin tuna chunks
1 large pot Greek style yoghurt
1 pot mint sauce
Mixed quantities of the above together, topped it with grated carrot and put in lunch boxes along with polenta slices, now slightly crispy round the edges.
Ate about an hour ago, it was scrummy!
