3.5mm Jack Adapter

I'm wondering if is possible to find an adapter to enable me to connect an intercom headphone set, which has two 3.5mm jacks (ie a pink one for mic, and a green one for headphones), into the 3.5mm jack of my simple Nokia work mobile, or any other device with a single jack socket.

Would this do the business, or am I being naive about this?

No, that adapter won't work. That is for connecting 2 headphones, ie output sound to both.

Most phones use a TRRS connector. ie it has an extra conductor ring for the microphone. So look for a TRRS adapter.
Though some older phones are non-standard, ie they have the rings the opposite way around. This might include Nokia.
Also depends on what sort of microphone you are using. If it is battery powered the adapter needs the right attenuation.

Conversor also have versions for powered mics or older phones.
