Freezing butternut squash
« on: 10 October, 2010, 01:09:25 pm »
In a fit of health, I bought a butternut squash, with a view to roasting it in chunks.  But it's too much for one portion, and I don't want to eat it all week.  Can I freeze some in portions, roasted.  Or should I roast it in chunks raw?  Cooking all in one go would be more efficient. I guess it might go a bit mushy, but I'm not too worried about that.

I'm going to slow cook some red cabbage and apple, too, I know that'll freeze.

Freeze in chunks but try and get as much air out of the plastic bag as possible, hope this helps.

Make excess into soup* and freeze that?

Cheers for the advice.  Soup is an option, but I'm going to freeze it in chunks in bags, and then I can make soup anyway, or use as a veg. I need to do small portions in bags, because my freezer is only an icebox, and filling it is like a 3D jigsaw.

For some reason, I never have soup for dinner, something in me says that soup isn't a proper dinner.  Bonkers, I know, because you can make it as much and as filling as you need, but I just never think of it.  With the wherewithal in the freezer, I might.

Don't be sill the tusk would stop you closing the door.
I think you'll find it's a bit more complicated than that.
