Last night we had haggis for dinner. My colleague said “but it isn’t Burns night until the 25th” to which I responded that haggis, like pancakes, is too good to save for only one day a year..

Mmmmmm.... haggis... pancakes... I think I might have just had a totally brilliant idea...

Roasted Kung Pao Brussels Sprouts :thumbsup:

Ingredients
450g Brussels sprouts
1 purple onion , sliced
3 tablespoons olive oil
1/4 teaspoon coarse sea salt
1/4 teaspoon black pepper
50g roasted cashews (or peanuts)

Sauce
2 tablespoons Chinkiang vinegar
1 tablespoon soy sauce
1 1/2 tablespoons sugar
1/2 teaspoon cornstarch
Pinch of salt
1 tablespoon oil
1/2 teaspoon whole Sichuan peppercorns 4 to 5 dried chili pepper
3 cloves garlic , minced
1 teaspoon ginger , minced

Directions
Preheat oven to 200ºC
Remove tough ends of the Brussels sprouts and halve them. Try to keep them evenly sized; quarter very large ones if necessary.

Place Brussels sprouts and onion onto a baking sheet. Add olive oil, salt, and pepper. Toss to mix well. Arrange the Brussels sprouts so the flat sides face down. Arrange larger pieces on the edge of the baking sheet because they’ll cook faster.

Bake on the middle rack for 15 minutes. Flip and bake for another 5 to 10 minutes, until the sprouts turn crispy and cooked through.

While baking the Brussels sprouts, prep and cook the Kung Pao sauce. Mix Chinkiang vinegar, soy sauce, sugar, cornstarch and salt in a small bowl.

Add oil and Sichuan peppercorns in a small pan, and cook until hot. When the peppercorns turn dark brown, scoop out and discard. Add dried red chili pepper. Stir until the peppers turn dark brown. Add minced garlic and ginger. Stir a few times.

Stir the vinegar based sauce to dissolve the cornstarch completely; add to the pan. Cook until the sauce thickens and remove from the stove immediately.

Once the Brussel sprouts are cooked, add the roasted cashew and Kung Pao sauce (or pre-made Kung Pao Sauce). Gently toss a few times and serve immediately as an appetizer, or as a main dish over steamed rice.

NOTES
Have Included broccoli florets and pork sausages to the bake mix before now! Yum yums! WONDERFUL sauce Kung Pao

Hmm, I like the sound of kung pao. I think I might use cauliflower though.

Awesomely unsophisticated duck leg curry last night (one of my favourite things, sear two duck legs with a bit of turmeric and take them out of the pan, chop two onions and fry till they start to caramelize, in the meantime chop up a big nug of ginger the size of a fat man's thumb, half a garlic bulb, and a chilli pepper in a food processor till fine, and add them to onions, continue to fry till fragrant, add a heaped teaspoon of ground turmeric (or add some fresh turmeric to the ginger/garlic/chilli, but note you will turn everything orangier than a memory of the late 70s) and a heaped teaspoon of garam masala, mix up, add the duck legs, and enough hot chicken stock to submerge the onion mix, cover and cook for about two hours, try to avoid stirring it too often, or throw it in a slow cooker and forget it for several hours).

Tonight is pizza night, of course. Home-made dough, pesto, salami and parma ham, fennel, artichoke, olives.

ETA: forgot mushrooms.

WR veggie haggis is pretty good, although I prefer the carnie type. I've never tried the Asda variety.

I made omelettes for tea, and had a loaf timed to finish so it was lovely, hot and fresh. They were the best omelettes I've made for quite some time.

Half an onion fried with a dollop of curry paste & 2 kipper fillets stirred in. Served over rice & garnished with boiled egg & a dollop of chutney.  I don't think it deserves to be called proper kedgeree but it went down well enough.

Ah, kedgeree. My favourite recipe is Delia's "Buttery Kedgeree" - indexed in her coookery book under "B" not "K".

We'll be having baked seafood risotto (Saturday's leftovers) with broccoli and peas.

NAFC, was supposed to be Salmon Pho*, but I am on week 12**, have spent the last week writing policy documents and have >< this much energy.

That's what I thought - reasonably worth a try for the reasons described. But pushed back to tomorrow.

As now reheating yesterday's leftovers of the wonderful Leon veggie curry (as told by Allegra McEvedy in the Guardian donks ago), which one has been enjoying for quite a few years = stands the test of time/or stuck in one's ways?

Chicken livers, onion & mushrooms on papardelle pasta with an egg, cream, nutmeg & pecorino sauce.  Not a great success.  I should only have used half the amount of liver, but wanted to finish the pack,  and the sauce didn't really work with it.   ???

I think in that kind of sauce, it would need a bit of liver as flavour, rather than a lot. Leastways, that's how I'd do it (I'm not a recipe guy, I just make it up).
