Hydraulic brake compatibility

What's the compatibility like within Shimano for hydraulic brakes? If I have say GRX, or Ultegra levers, can I use Deore or Deore XT calipers ?

All completely interchangeable AFAIK. Though watch out for mismatched fittings.

As Grams says, the issue is the connector between the lever and the hose if you buy individual parts as opposed to pre-terminated sets. I bought some Ultegra levers and separate callipers, and had a fun time finding the correctly threaded hollow nut (it comes with neither hose or lever) it being completely different to the 105 levers on another bike. The correct technical manual is a must.

Another option is the Hope RX4 calipers. It is compatible with most Shimano levers. Though they say "not currently compatible" with GRX Di2, not sure why.
