I can't see what the issue is here, other than how squeamish people have become. When you buy chicken portions in a supermarket, they have had all the giblets removed so people are unused to meeting the dark red bits from the chicken, it's all very sanitised. The stuff supplied to KFC doesn't get this as it's cheaper to get the staff in the kitchen to deal with the stuff (you scrape it out with your thumb from behind the bones) than to buy the chicken pre gutted. In this case it looks like they missed a bit.
I'd be more worried about the fact that the chicken had been cooked in a pressurised deep fat fryer - all that oily fatness being forced into the chicken under pressure!
[eta] Using the scraps recovered from the oil filters as the base for gravy would be higher on my list as well.
