Plum tree disaster - unripe plums suggestions?

Help! We got home from a weekend away to find one branch of the plum tree had peeled off under the weight of fruit and was lying on the grass. There's at least 3 buckets-full of green plums. Following internet & neighbourly wisdom we've spread them out in boxes with a few bananas and left them outside in the hope that some will eventually ripen.

So - any suggestions from the panel for what to do with a large quantity of unripe plums?

Treat as veg.
Stir fry small quantities along with your usual ingrediants.  Don't make them the main ingrediant, though.

Our plum tree ripped itself in half three years ago and then died

yes, it got remodelled last year & will be getting some further attention.
