Mildly impressed if the thief just rode off on it...

Usually bolt cutters and a van are involved.

Why do people steal recumbents - they're relatively uncommon and presumably harder to sell on without drawing attention?

The Fujin SL is a nice bike, and eye-candy for a rouge recumbent thief.
Interestingly enough, it looks like it's had a Burrows front monoblade fork fitted [quite likely done at Bikefix], and there aren't many of those around, so recognition wise, it's very distinctive indeed.

Blimey - it is identical to my fujin sl - exactly the same bike conversion! I can't imagine what a bike thief is going to do with it - it's not easy to ride at all and I can't imagine the bits are worth that much.
Anyway - to the OP if you need a replacement I will do you a great deal - I fear I am never going to regain the form that makes such a machine really fly. I had a fantastic time when I could though, and many happy memories.
Never thought of hitching a trailer to it though.

When you're the kind of scumbag that steals other peoples stuff, whatever you make from the parts is a profit.
