Peanut cookies

Ingredients
===========

125gm crunchy peanut butter

1 egg

80gm sugar (castor or demerara, it doesn't really matter)

something else. A handful of raisins, hard fudge or chocolate squares.
   
Prep
====

Beat the sugar and egg together until creamy.

Mix with other ingredients until thoroughly combined.

Dollop cookie-sized lumps on baking paper on a tray, flatten out to 1/2" - 1/3" or so thick.

Cooking
======

Bake in 180C oven for 10-12min until past golden brown.
   
Remove from oven, allow to cool for a bit, then peel off baking paper and complete cooling on a tray.
   

The resulting cookies are very durable - they'll survive bumping in a saddlebag. Being mostly peanut butter with sugar and egg, they are very high in calories.

They are so quick to make, I'm getting into the habit of throwing some in the oven whenever the oven is on.

Optional extras; black pepper and chilli powder.

They go very nicely with icecream.
