Some of my favourite covers that haven't already been mentioned are:

Hallelujah - Jeff Buckley (Leonard Cohen)
That's Entertainment - Morrissey (The Jam)
Sealion - Feist (Nina Simone, although it's not really a cover as it has different lyrics and a new title)
Toxic - Mark Ronson (Britney Spears)

I know it's already been said quite a bit, but +loads to Johnny Cash and the American series.  Hurt is a real goose pimpler (and I was a big fan of the original).  I also like Hendrix's All Along the Watchtower better than the original.

Some of Mark Ronson's covers (interpretations? adaptations?) are interesting.

Mmm, I like his version of Radiohead's Just.

Another  for Mark Ronson's Toxic.

Another one that hasn't been mentioned is Apocalyptica's cover of Toxicity by system of a down, bloody good stuff.

Joe Cocker's version of ' A Little Help From my Friends' is so much better than the original, but then anything would be an improvement.

And when he did it with Marti Pellow at a Prince's Trust concert way back in the 80s, Pellow squawked about like a strangulated budgie and completely embarrassed himself. He was utterly outclassed.

Hallelujah - Jeff Buckley (Leonard Cohen)

Seconded.

Nah - KD Lang's version is much better. And her version of After The Goldrush is a thousand times better than Neil Young's warbled original.

Favourite cover of all time though - "Light My Fire" - the Doors song, as covered by Julie Driscoll with Brian Auger and the Trinity. Worth digging out for a listen if you like '60s jazz organ.
