Exuberant Cake

What does it indicate when, having followed a cake recipe (involving self-raising flour) accurately, the cake enthusiastically rises lots in the middle, usually cracking and opening up, whereas is should just come out serene and modestly domed?  Does this indicate too hot an oven (our is a fan electric, so does need compensating for) or some other error in preparation?

All my cakes do that! My Mum's do too so I've always thought it was normal.

Thinking about it, baking the cake a bit cooler may help but you may have to wait longer for your CAEK and it could be heavier.
