Just watching this on i-Player.
More comments later but, so far, I think it's a must for North-Westeners on here.

It might not be entirely to your taste MV (no pun intended)- it's highly meat focussed.

I've goy lots of friends from Bolton and I'm going to have to ask them if they've ever had it

I watched it, it was excellent. My Dad used to eat tripe and vinegar. He used to buy it from Leeds market.
I think you'll find it's a bit more complicated than that.
