I was thinking that if we get friendly and his guard comes down, I might ask him how much of his inspiration arrives via 3am conversations with the benefit of single malt/obscure real ales/recreational herbs.

The show was on just now, I did look out for Padbeat, but couldn't pick him out.

I went to his new London restaurant, and he came out to talk to us and mentioned the show. It's very weird to realise that your hero is a chef.

Just watched the show on 4oD. Very interesting - though supply chains will probably dictate that 'boil in the bag' will be a strategic risk which will require chefs still being trained and able to cook from scratch.

Look forward to hearing the inside story when he gets back.
