Longbike Upgrade

I have a fairly basic 700c vee-brake Trek hybrid with an Xtracycle extension and a Bafang BBS01 bottom bracket motor. I've used it for years as a load-hauler in drumlin country, but now both of us are getting older and it is severely lacking in gears and braking.

The Xtracycle has flat-mount fittings for a disc brake, so I was thinking of a Nexus 8 disc in a fatter 26" or 650b with a BB7 or better, and maybe if funds permit, a new fork with similar the front. Or, given the amount of parts I need, should I be thinking of a suitably equipped full bike?

If I'm going to replace the frame tooI'd ideally like a step-through one, but I wonder if it would stand the strain. I originally had the Xtracycle on an ancient Cannondale tourer until one day it ripped the down tube apart. Don't want to do that again!
