If you mean trail centres, all I can think of is Aston Hill near Tring, Hertfordshire. I've never been there myself. I believe that they charge some money for using their trails and have heard that they get a bit boggy after rain, but are quite well known and quite popular. There's cross country and downhill trails there.

I prefer just riding around the Chiltern Hills bridleways.
There is Woburn Sands near Milton Keynes, which is my local mountain bikers place. It lives up to it's name in places and can be very sandy.
There's also Rowney Warren between Hitchin and Bedford. Pretty low key. I wouldn't go to much trouble to ride there. Just not worth it IMO.

Epping forest has a good criss of trials to get lost on. Broxbourne woods near cheshunt are good. Baton le clay has good single track on hills above. Then there's the secret places you'll have to find...
