You miss out all the beauty bits without gaining in easyness. The Eiffel crossing you choose is harsh.
I'd go completely different, more southern. And making good use of several converted railroads to find the right optimum between beauty and hard riding.
So I'd follow your route untill slightly south of Landen. Then the Ravel 127 to Huccorgne. A bit of road riding to Huy where you pick up the Ravel 126 which you follow untill it turns sharply south. Pick your way over roads to Trois Ponts (some beautyfull Ardennes riding here). Then from Trois Ponts follow the old Vennbahn untill you are quite high in the Eifel. The new branch line to the Büttgenbach lake might allready be ready (they were constructing it this spring). It's only a short hop from here to the Losheim region where the Kylltal-Radweg starts, following this small river down to the Mosel. Along the Mosel is another good route down to Koblenz. It might be a tad longer but certainly not harder.
