Did the test today (27C 8)) and it puts me comfortably in Zwift category C. With the riders of over two complete categories above me that must be below average, being realistic.

The categories are based on W/kg, for which you are fairly average (2.5-ish). But your absolute Watts are still quite high, and that matters more than W/kg on the flat.

I dream of 2.5W/kg...

How does the price of a cassette designed for 1x compare to a 2 or 3x cassette?

Dunno, but I'm paying about €100 for an 11-40 cassette used in my 2x11 setup.

And I love my 11 tooth cogs. There's no need to be thrashing your1 legs about at 100rpm if you've got nice meaty big gears.

I suppose it comes down to preference. I wouldn't consider 100rpm "thrashing" - I'm still reasonably comfortably spinning at 110rpm. My knees were not made for mashing.

IME 'thrashiness' is a function of both cadence and crank length.  I find 100rpm feels thrashy on 170mm cranks, but fine if they're 160mm or less.

Ah thanks for that, out of my budget then. Thought it would be.

That's for a Shimano XT 11-40 for 11 speed. There are cheaper options.

If you are talking 9 speed cassettes you are talking typically £15 to £50 depending on what “level” you go for. 9 speed chains you can get for around £7-10. So worth changing chains before it affects cassette to need replacement

Drive train economics 😀

SLX grade cassette is about €80 - https://mantel.com/shimano-slx-m7000-11-speed-cassette

XT grade cassette is about €106 - https://www.mantel.com/shimano-xt-cassette-cs-m8000

Assuming 11 speed for both. These work with 2x and 1x, and even 3x.

Ultegra 11 speed is €87 - https://www.mantel.com/shimano-ultegra-r8000-cassette

That's for an 11-34, that is aimed at a 2x system

105 11 speed 11-34 cassette is €60 https://mantel.com/shimano-105-r7000-11-speed-cassette

So the range seems to be from about €60 and up.

If you're using older 9 and 10 speed stuff, the cost is a bit lower.

Alas bike parts have gone up in price a lot due to a reduction in demand.

I have a shelf to keep my own stock, as I don't trust the supply chain at the moment, it was very bad a month or so ago. There's a full set of drive train, tyres, brake pads, brake rotors, and bottom bracket there ready to fit when the current lot wear out.

Is there any difference for between cassettes?

Sarcastic answer yes: upto €46 difference...

But aside from tooth count. The main difference is materials. An XTR cassette of the same size will weigh less than an XT, which will weigh less than an SLX. Whether it will last as long at the reduced weight, is another question.

Or some wide-range Sunrace cassettes, maybe cheaper than Shimano. Though also seem to be out of stock everywhere just now.

Lots of odd-brand ones on Ali Express starting at £30.

Decathlon do a £15 9 speed 11-32 cassette as well. Weight 360g. The xtr 9 speed 11-32 is 224g at £90.  A 136g saving costs approx £75

On the other part of the OP's question, which I don't think has really been covered, mine is very quiet, near silent, in all gears when the chain is freshly lubed. Noticeably not so silent at 100 miles or so but still fine; really wants topping up a little at 200+. Using Fenwick's Pro chain lube.
