Spelt/Buckwheat breadmaker recipe?

Does anyone have a breadmaker recipe for bread using spelt and buckwheat flour by any chance?  Or do any experts want to hazard a guess as to what this recipe would have in it..?

Just spelt or buckwheat, or something including them?

You should be able to go up to 50% spelt and 50% wheat before the breadmaker starts making messes instead of bread. Spelt by itself makes incredibly tasty bread but is too swift for most breadmakers - it proves faster, and needs less kneading. If you can reduce these by 40%-ish you should be able to make all-spelt in the breadmaker.

Buckwheat has no gluten, so you definitely need to be mixing it with wheat (or similar) flour in your breadmaker. I'd guess no more than 25% buckwheat, and ideally use a strong white flour to maximise the gluten you're getting from the wheat.

I quite keen to try and produce a 'heavier' bread, so less gluten is OK.

I wonder if Spelt/BW/Rye might work - if I can find a suitable prog on the breadmaker (Panasonic).

Bread came out well - moist, but nicely dense and dark.  Used 500g total/400ml water/tbsp oil/tsp sugar...

So, breakfast this morning...
Cup of earl grey. Fried egg (average one/3-4wks ) done in ev olive oil, on slice of Sp/Bw bread, with dash of ground pepper.
Followed by slice Sp/Bw bread with honey.

 

Having the bread for lunch too...
