Wotcha need

BIG juicy steak
Good quality bottle of red
Teeny bit of sunflower oil
Salt Salt flakes
Whole peppercorns
A hammer/rolling pin
A saucepan/frying pan with lid
A chopping board/plate
A fork

Step 1: Open the bottle of red, leave to breathe for a moment

Step 2: Stick a frying pan/saucepan on the stove with a tiny bit of sun flower oil, lets say just enough to lube the pan + a table spoon. Stick on medium heat..

Step 3: Pour yourself a big glass of red wine and take a sip, while doing that, take the steak and stab it umpteen times all over with the fork.

Step 4: Take enough sip, and pour a bit over the steak and rub it in nice

Step 5: Repeat Steps 3 and 4 with the other side of the steak

Step 6: Take another sip, and then add a pinch of salt to the heated oil

Step 7: Take the whole peppercorns and crack them with the hammer or rolling pin, probably best if you do this in a packet of sorts and then add them to the oil and mix it all together

Step 8: Take another sip, put the heat on high, and take another sip, jiggle about and dance/sing along to the music playing.

Step 9: Stick the steak on the pan and cover and remove from the heat. Count to 45 (This is for rare/medium, if you like it medium/well done count to 90) return to the heat, flip over the steak and repeat.

Step 10: Stick the steak onna plate and decorate with a bit of parlsey or coriander

Step 11: Top up glass and enjoy :)

Hmmm, steak has been proposed for this evening, and I may just lightly chill that Crozes Hermitage I have handy.

Apparently you'll get it crispier and a little juicer if you rub the oil into the steak instead of putting it in the pan.

Le Creuset Griddle Pan

Use some green peppercorns instead of black peppercorns but that's adding to the prep time.

But you can't use a grinder with green peppercorns!

Crispy may have been the wrong word, but it gets the outside sealed better so you loose less juice.

Griddles tend to be "smokey", Sams way is less so. And the steak seared just fine Gonzo.
