BBQ Salad Suggestions

I seem to fall back on old faithfuls when cooking for larger numbers (c.60 this time), my staple salads tend to be:

Potato - fairly standard type
Puy lentil with feta and sundried tomato tomato or a greek salad
Beetroot - light pickle
Coleslaw - standard and/or a yoghurt dressing
Tabboule
Cucumber - lightly pickled
Tomato/onion/balsamic
mixed beans
TCP (aka, tomato, Cucumber, Pepper)
Carrot, cumin, lemon
Probably also rice & peas Jamaican style

Bit bored with it all -- got any alternative suggestions?



BBQ wise will be the following:
- Dave
- Ribs
- Burgers
- bean burgers (as long as I don't make them too sloppy and they turn into bean piles)
- sausages
- Jerk chicken
- chicken drumsticks
- Pulled beef

Many other recipes online. My late grandmother always had beetroot in hers.

Cooked meat, spuds, chopped pickle, anything else you can muster, mayo.

Bacon & Cheese stuffed peppers.  Dead simple and always a favourite.  Leave out the bacon for the veggies ;-)

Celeriac remoulade is a personal favourite - a bit like coleslaw but stronger flavours.

Agreed, but I never seem to be able to buy really crisp firm celeriac in the uk.

Spinach leaves, rocket and watercress base. Add cherry tomatoes, crumbled feta cheese and diced red pepper (pointed sweet ones are best) sprinkled on top. Garnish with diced pickled beetroot and mint leaves.

Mix up a tablespoon of honey, a teaspoon of wholegrain mustard and juice from half a lemon. Add a little oil to get a pouring dressing, shake vigorously in a jam jar or similar and pour over.

For the adventurous add a finely diced small red chilli (seeds removed unless you want your guests to drink lots) into the red pepper. It's delicious  :thumbsup:

Grated carrot and beetroot with caraway seeds, with a pumpkin oil or vinaigrette dressing.

Greek potato salad:

boil some peeled chopped potatoes with chopped onion

when the potatoes are soft/cooked, remove and drain

mix 3/4 cup of extra virgin oil with the remaining 1/4 cup of freshly squeezed fresh lemon juice.... 1/4 cup of balsamic vinegar (you will need to mix all of this in a bowl  in a bowl) ...

add 1/4 cup of chopped fresh parsley to the still warm potatoes, and a heaped tablespoon of dried Oregano which you crush in the palm of your hand

add the olive oil lemon juice/balsamic vinegar to the warm potatoes and give it a good stir .... add salt and freshly ground black pepper

place in the fridge to cool

South African Carrot salad:

grate some fresh carrot into a bowl

add some brown sugar to the carrot (a heaped tablespoon)

add some canned sweetened pineapple chunks to the carrot and add some of the juice from the can

serve cold

My mom's creamed spinach recipe for BBQ or sunday roast


boil some fresh spinach leaves in salted water, with a chopped onion and 2 peeled chopped potatoes

when the potatoes are soft, drain, then add back to the pot and mash

add some salt and loads of freshly ground black pepper

add 1/4 tub of fresh double cream, and reheat whilst constantly stirring

serve hot

loads more (I lived for over 40 years in South Africa and we used to BBQ at least 4 times a week throughout the year)
