I want to upload a spreadsheet to a sharepoint site so it's readily viewable, but not editable. It's a multi-sheet document. The only way I can see to do it is to individually protect each sheet using the "protect sheet" tab with a password, and selecting the various attributes to protect. The "protect workbook" option only offers "protect structure" and I'm unclear as to what this means.
And yes, I know I can do this as a pdf, but what are the options in Excel?

Protect structure protects the sheets so they can't be hidden, copied, deleted etc. You already know what protect sheet does.
Sounds like you want to protect both the sheets and the workbook

Why not make everyone elses access to the spreadsheet, read only in Sharepoint?
