Chicken and ham pie
« on: 08 October, 2016, 08:54:19 pm »
I can make a decent chicken and ham pie, using left over roast chicken and ham, onion etc etc.

However, this evening I cooked roast shoulder of pork, which was very nommy. Does Thee Panel think I can get away with using some left over roast pork in place of the ham in such a pie.  An actual pork pie might be a bit too far up the pie shaped learning curve at this stage (and starts with uncooked pork as far as I can tell)

Why not? Shoulder is nice and moist, tho you may miss the saltiness of the ham.

Pork, mushrooms, onions, red chilli or paprika might go well

Porks weird. I never think it reheats very well, always tastes strange. Much better served cold if you have leftovers.
I think you'll find it's a bit more complicated than that.

Proper pork pie uses uncooked pork, gelatin and hot water crust pastry, which is an art form all of its own.  Pork and chicken pie would be interesting, and would certainly work, but might need something extra to give it a little kick, as ElyDave says.  For a more trad pie, you could go with a layer of sage and onion and a layer of Bramley apple.
