Let's throw a horse into the mix too.  I remember Cipollini racing a horse over 1km, I think the horse won.

SO we have sir chris hoy + bike usain bolt + trainers , Zara philips + horse  who else is going to join the wacky races ?

Someone really should set that up as a televisual event. It'd be even better than Brian Jacks doing 100 parallel bar dips in a minute.

The BBC late evening roundup show uses the Superstars music, and every time I hear it I'm whisked back to Friday teatime. I can almost taste the potted beef sandwiches.

Greco-Roman wrestling in the tradition of the Oxford-Cambridge boat race. That is, only two competitors  - Greece and Italy- who have a wrestling bout every Olympics to see who's best.

Like Kirst's horseback archery suggestion, I think that Mongolia already does that.  I'm sure I've seen this on some Michael Palin type programme, I've done a bit of googling to find it but without success.
