Can't think of any real reason why not, as long as you're pairing it with an 8-speed (or friction) shifter. Jockey wheels might nominally be a bit wider, but I'd suck it and see ...

Worked on my road bike when I changed the cogd to 8 speed before I went to 105 set up.
