Title: Going vegetarian

No, not completely, but I do want to dramatically reduce the amount of meat I eat, to a couple of times a week at the most. Who knows, I may eventually want to eliminate it from my diet all together.

I've been eating veggie meals a couple of days a week for a few months now but I need to expand my repertoire if I'm going to cook more than stir-fry's and veggie fried rice. I've found a website with loads of veggie recipes so that's probably the dinner side sorted. For breakfast I usually have cereals or toast so that's fine, but what about lunch?

Can anyone suggest yummy alternatives to the standard sandwiches with cold meats & salad etc. Salads are obviously an option but I don't want to eat those every day so I'm open to other ideas.

Of course, website suggestions are all welcome. Thanks

Egg mayonaise.
Hummus and diced peppers.

Slices of roasted aubergine
Sundried tomatoes in olive oil with rocket and pine nuts
Mozzerella and pesto
Cheddar and apple
Stilton and chutney

The list is potentially endless  :D

As per Liz's but use roasted spuds instead.

Sausage rolls made with SosMix.

Thinking of other stuff, maybe try getting hold of the Dog With Wings' cookery book, has some good recipes (or if you can't get that the Australian Women's Weekly books can be very good)

Chocolate with strawberries and paprika in.

Who needs bread?

Tortilla Española

Boil some spuds for 20 minutes or so (not too soft). Whilst they're boiling chop up an onion and some garlic. Whisk 4 or 5 eggs. Salt and pepper to taste.

When done, drain potatoes and slice about 1/8" thick.

Tiny bit of oil in a frying pan (one deep enough for the finished thing).
Gently fry onion and garlic for a few minutes until soft.
Add potatoes and fry for a couple more minutes.
Turn down to a gentle heat and add eggs. Cook on gentle heat until set.

When this is done, put it under a medium grill until the top is finished off.

Place a plate over frying pan and tip it out, allow to cool.

Good for a few days in the fridge.

Also good with sweet potatoes instead of normal spuds.

These are heavenly; I got the recipe from a lady at the Peace Pledge Union.  She'd made about a hundred and I think I accounted for at least 20 of them.  ;D

Canellini bean & Olive paté.

(I think I may have posted this before in the old place.  Quite simple to make: you need a food processor).

4 oz. dried canellini beans.
2 oz. sundried tomatoes (not fresh tomatoes).
2 oz. kalamata olives.
olive oil.
chopped fresh basil
pepper.

Soak the beans overnight and cook until soft.  Drain and blend in food processor with enough olive oil to make a smooth paste, and basil and pepper (do not add salt).
Soak the tomatoes in water about 20-30 minutes, drain and squeeze out excess water: chop finely; stone and chop the olives.  Mix everything up.  You have a paté!  It will keep a few days in the fridge.

Depends if your Vegan or not. Most eggs will never become chickens as they are not fertilised.

Baguette, rocket, lemon juice, olive oil and salami (hold on...)

Tortellini. Get it from a supermarket, poke a hole in the top of the packet, fill with boiling water, prod with fork for a couple of minutes. Drain. Eat. Hmmmm.

Do you actually want to become a vegetarian, or simply cut down on meat intake? If the latter, there are lots of lovely thai curries you can do (butternut squash is lovely in red thai curry) which are not meat-centric, but not really veggie-suitable due to the teaspoon of fish sauce and shrimp paste in the curry paste.

For sandwiches: Hummous.  Refried beans (recipe on this website: Vegan Recipes - Kake's (Vegan) Cookery Site (http://www.earth.li/~kake/cookery/) along with a bunch of other nice things).  Carrot & lentil pate (much nicer than it sounds, recipe also on that website).  Leftover curry makes excellent sandwiches :)

I agree very much on the curry (aubergine's great in them too), and I also like risottos as veggie dinner.

Mushroom sandwich   with thanks to Rosamund Richardson.the great vegetarian cookbook.(publisher used no capital letters)

Slice mushrooms and microwave.(Steaming)for couple of minutes.Pat dry.Cool.
Ricotta cheese or vegan alternative on granary bread then load the mushrooms.I add rocket or land cress from the garden.S+P.
Then the other slice of bread.

Sounds wierd but good can't be arsed to cook food.

or a salad of cooked pearl barley (cooked with bouillon powder in the water), salad leaves, chopped onion, avocado, peas, radish and pumpkin seeds, topped with the oil of your choice (pumpkin seed rather than WD40) and lemon juice.

Ooh! That reminds me of couscous salad. Make couscous, let cool, chuck in whatever takes your fancy, such as feta cheese, avocado, olives, tomatoes, cucumber, raisins, cashew nuts, spinach and a load of herbs and spices of your choice. Very good summer lunch.

That'a very kind, but now I have to live up to my reputation!

This thread is timely, because I have stopped eating meat. Not having a kitchen meant I was buying nice fresh bread and too much salami and meaty things. My weight shot up, and I now have a wobbly alien belt of fat around my middle. Not nice, and not healthy.

So, this week I have been playing with the Remoska. A supper of six different roasted vegetables, and the same served cold as a packed lunch. Potato, green pepper, courgettes, leeks, tomato, garlic shavings, and a huge handful of parsley. Everything just sliced thin and layered in the pan, some olive oil, and just left to cook away in it's own juices.

A few nights ago, I had a huge bag of peppers to play with. I roasted all the red ones, and had pitta stuffed with feta, roast pepper, black olives, and flat leaf parsley, for lunch.

The next thing I did was green peppers stuffed with wild thyme and goat cheese. This was so bloody easy it was silly!

If you are a sandwich person, then a layer of sweet roast pepper add richness, sweetness, and moisture to all the bread stuff. A useful thing to remember.

Don't forget tasty things like olives. A few slivers can sharpen up the flavour of everything else. Try a simple salad of tomato, black olives, fresh thyme, butter beans, and tomato, dressed with a good olive oil.

Ooh, I forgot my favourite sandwiches: Marmite and nut sandwiches. :P Yum yum yum. I like cashews, but flaked anything works.

Here's a couscous salad, on the lines of Nienke's suggestion.  Serves about four, generous portions.

10oz couscous.
1 pint vegetable stock (yes we use veggie stock cubes/granules!  Small luxuries!  French court bouillon works well).
1 red onion (use an ordinary white onion if you don't have red).
2 cloves garlic.
1 heaped tsp ground cumin.
½ tsp ground turmeric.
2 large fresh tomatoes.
½ red pepper.
Good handful chopped parsley.
A few fresh mint or basil (or both) leaves, chopped.
Olive oil.
1-2 green or red chillis, seeded and finely chopped (optional)
grated lemon rind.
Salt and pepper.
juice of ½ lemon.
Handful of cashew nuts or pine nuts.

Chop the onion finely, crush the garlic with salt, fry these in a little olive oil until tender.  Add the cumin and turmeric and fry gently for 1 minute more.
Add the hot stock and bring to boiling.  Remove from heat.  Pour in the couscous, give everything a quick stir, then leave to stand for about 10 minutes.
Finely chop the tomatoes, the red pepper, and all the herbs.  Seed and finely chop the chillies.  Lightly roast the nuts.  Mix all the ingredients together in a large bowl, leave to cool, and serve with lettuce leaves.
