bake, scoop, mix filling with an egg, bit of cheese, spring onion. Dust with paprika and back until browning.

Daal is also good on straight baked pots.

Ditto home-made beans.

Surely the only true topping is mashed potato?

As a child, we always had baked potatoes with loads of butter and then topped with mushy peas and mint sauce. I have a craving for this now.

As a child, my grandparents would always us to see the fireworks at the local FC, and the club always used to serve hot potatoes and mushy peas (you could also get mushy peas on their own, volcano-hot in a styrofoam cup). Hence the nostalgia for a tray with a steaming hot potato and peas (dollops of mint sauce are essential). Haute cuisine in the country of Erewashia.

Things I have put on baked potatoes:

Egg mayo with and without bacon.

Tuna mayo.

Hummus and cheese.

Cream cheese with garlic.

Chilli.

Beef ragu.

Vegetable and meat tagines.

Quorn goulash.

Chicken and bacon in a caesar dressing.

Cauliflower cheese.

Plenty of butter/salt/pepper is mandatory.
 
Coronation chicken goes well.

Cheese/spring onion/mayo is another favourite at ours.  Greater than the sum of its parts!  :thumbsup:

Soufflé Baked Potatoes:

Bake the spuds
Scoop out and mash smooth
Beat in egg yolks and your cheese of choice
Fold in stiffly whisked egg whites
Season, re-load the potato skins, top with a sprinkling of cheese
Bake a further 20 minutes

A long-standing family winter lunchtime favourite. Based on Delia's recipe in 'Frugal Food'. She uses fried spring onions, butter and soured cream instead of just cheese.

Was planning to have spag bol for dinner tonight - we have several portions of bol in the freezer, so it's an easy win. But I just remembered we don't have any spag in the house, so will probably have baked potato bol instead.

Bake the spuds scoop out and mash -
mash in a small tin of red salmon with some butter black pepper and salt and then back in the oven to warm up

I am quite a fan of cheese and pickled beetroot. Goes well with jacket potatoes.

I often bake spuds when I have the oven on for something else. Stick em in as the oven pre-heats, ignore them while making whatever, leave them in the still hot turned off oven while eating tea, and shove 'em in the fridge once cold to have low energy cost pre-baked jackets the next day. They nuke to be as nice as the frozen ones, or reheat in the oven in about 15 mins to be much nicer. I haven't tried pre-baking and then freezing them yet because I tend to do more menu-planning than batch cooking/prepping for the freezer, but can't see why it wouldn't work!

Absolutely. I frequently have tubs of such stuff in the freezer. But this is also where "tin of beans, tub of curry powder, microwave" comes in.

Given how minimal one's involvement with the baking of a potato need be, this approach can result in spending about three to five minutes in the production of a very satisfying meal.
