Apple crumble toppings or apple crumble
« on: 21 August, 2010, 10:03:38 pm »
Right you lot.

Am having crumble quandry, havge made a crumble topping with ground almonds and gram flour that was lovely quite savoury and also indiany tasting in the morning.

But am after a few more experiments, tonight will be a spelt flour crumble and was wondering what the group thought about mixing in some chili flakes/powder in one instead of cinamon.

Anyone done it before?

Right crumble one:  No sugar or sweetner the apples are edible by themselves.

Apples peeled and chopped, covered in cinanamon powder.  The crumble topping made with spelt and ground ginger.  Think that the ginger and cinamon mix could be interesting.

Seems a strange time of night to be doing crumbles. Anyway, my mum wouldn't like the chili variation. HTH.
There's no vibrations, but wait.

You don't know me that well then  ;)

Well I'm an idiot, the crumble topping now look less crumble like and more a fime powder.  Also tasted a bit straight out of the oven and have burnt to roof of my mouth.  I am special  ::-)

Replace the ground ginger with finely chopped stem ginger and use moscavado sugar instead of white sugar in the crumble topping.

Ginger toffee topping!  :P

I like the thinking, but the sugar could be a no no.

But as MK1 went too much topping and its too powdery.  But fine to be consumed with ice cream or evaporated milk or even creme anglais.

Crumble was originally invented in WW2 as a low fat replacement for pies. Like carrot cake, it has persisted.

Ginger and cinnamon should be good together. Agree you don't need sugar, even if you don't have diabetes. Not sure about the chilli... though apparently the Italians do make a chilli jam! Maybe paprika powder would go better than chilli?

I never knew that, as I always though pie for savoury crumble for sweet.

Thought it would be chili chutney, but thats what gave me the idea as I've had chili jam and it was really nice.

Hate to tell you - but that's a bit of an urban myth.

There was a recipe for crumble in Mrs Beeton - and that's way before WWII.

Making a paprika one now.

So anyone thought about the idea of using bacon/pork fat with butter?  Pork and apple is amazing hence the idea.

Chilli and chocolate go well, you can buy sweet chilli sauce, so I don't see why you couldn't try chilli and other sweet stuff.

Bacon fat: There's a type of chinese biscuit/cookie that uses pork fat.
I am nothing and should be everything

Could it not be that both Crumble and Carrot Cake enjoyed a resurgence in popularity as a result of rationing, even though the recipes had existed beforehand?

Add chilli to chocolate and it's not really sweet. At least, not sweet like choc. It's hot and bitter I'd say. And tasty mm! BTW how about hot chocolate with lots of black pepper in it? Had that once, apparently it was a common winter drink among Polish (and presumably not only) Jews.

But yeah, give the chilli crumble a try and see how it goes.

Probably...

..even though wartime crumble wasn't as we know it today - as you had limited butter and sugar at the time,
