Eggs and Broccoli

That's all I've got in the kitchen apart from basics.  What can you make with eggs and broccoli?
It takes blood and guts to be this cool but I'm still just a cliché.

Yup - grill the top to finish cooking the eggs and brown the cheese.

Omelette, if you've got garlic and perhaps onion. Otherwise lightly steamed broccoli is good, as is poached or boiled egg; they'd share a plate without complaining.

Cut the broccoli stem into spears and pretend it's asparagus, then use it to dip into the yolk of poached egg.  You could have a side of broccoli with it.  ;)

If you are feeling adventourous try making a souffle omelette, like a normal one just a bit lighter:

Heat grill and a omellette pan.

Seperate the eggs, whip the whites to firm peaks, fold in yolks and cheese/other gubbins (maybe zapping or steaming the broc first would be a good idea).
Place mix in a hot pan, cook until underside STARTING to brown
Place under grill to brown top, the heat still in the pan will finish cooking the bottom.

EAT!

Fritatoid it is then.  Broc + poached eggs just seems to be...well... missing a slab of meat.

Well in the end I finely sliced a small onion and softened that in olive oil with some herbs and pepper, then added chunky broccoli and covered to let it cook a bit, added four eggs and some milk (beaten), then finished with Parmesan and black pepper under the grill.

Yum!  Top fritata action! :thumbsup:
