Over wintering bell and Vampire chili peppers

This year I`ve got into growing own bell peppers and chillis, have grown very well I indeed in conservatory and produced over 200 chilli peppers and about a dozen bell peppers off a few plants only.

I have heard / read that most (but not all) chillis can be overwintered by cutting back as they are perennials. But the two chili varieties are quite different in growth and leaves; the `Vampire` is a tall growing branched `tree` about 2 feet high and has produced a lot of fang shaped fruit, but is now shedding its leaves. The `Padron` , apparently a classic Spanish Tapas pepper, is bushy with glossy green leaves which are showing no signs of falling off. The bell pepper is similar growth.

Should all be cut back similarly, anyone had any experience of Vampire chillis overwintering?

....after the `tarte de pommes`, and  fortified by a couple of shots of limoncellos,  I flew up the Col de Bavella whilst thunderstorms rolled around the peaks above
