I rode up Ditchling Beacon on one foot a couple of months ago when my knee problem flared up mid-ride. Doable on a low-geared 'bent, but I can't imagine it's easy to balance a standard road bike on steep gradients with one leg like that.
I can't imagine the weight advantage of not carrying the other leg makes up for the uneven stroke, either.
Very impressive.
