Pancakes anyone?

Perfect pancakes are... with lemon and sugar, end of story...  ;)

Anyone have a great pancake mix recipe?

Lime juice instead of lemon. :P

Also, from Val D'Isere's hole in the wall creperie, a lovely crepe with chestnut puree and chocolate sauce. nom nom nom nommity nommity nommity....... :P :P :P

We'll be having galette completes followed by sweet pancakes tonight.
Have failed to find any buckwheat flour so we'll be using ordinary wholemeal flour for the galettes.

We did some crepes over the WE (pancakes are way too thick ;o). Here is our recipe:

500 g of flour
6 eggs
1 ltr of milk
one glass of water
one tea spoon of oil
a pinch of salt
(vanilla extract or rhum)

Will do 50+ thin crepes in no time... A nut of butter in the pan for each crepe.

Savoury were had with lardons mushrooms, cherry tomatoes, onions and creme fraiche; others with cheese and ham. Sweet with melted cooking chocolate and ice cream, sugar and cinnamon, sugar and butter...

Basic pancakes with sugar and lemon   
by Delia Smith

Makes 12-14

Ingredients

For the pancake mixture:
110g/4oz plain flour, sifted
pinch of salt
2 eggs
200ml/7fl oz milk mixed with 75ml/3fl oz water
50g/2oz butter

That's the recipe I always use. Doesn't make 12-14 though, more like 6-8! Maybe I make them too big?

We just made pancakes at work.  Used the Delia recipe with an extra 50%, and it made 18 pancakes (a couple were too thick).

Only the brits in the office knew about pancake day, and everyone else was sceptical of lemon and sugar filling.  Everyone enjoyed it though.


Yesterday was bolludagur in Iceland -- cream cake day.  They make cakes like profiteroles, but with jam as well as cream inside.  I am told that children get colourful sticks and they have to spank their parents with them before they get out of bed, to earn cakes (one per spank).  We had the cakes at work, but decided against the spanking business.

Today in Iceland it is Sprengidagur -- which means exploding day.  You are supposed to eat so much bean soup that you explode.  I can think of two mechanisms by which this could be achieved.

We always use Delia's recipe.

However, Mrs FB always prides herself on getting 14-18 pancakes out of that recipe, whereas I like my pancakes to have a bit more substance and only get (want) to get 8-10 pancakes.

She thinks she's better than me.   :-\

My batter is ready. I will count how many pancakes I get ;). I'll use my small omelette pan tonight (rather than my larger crepe pan) which takes about 60ml of batter per pancake.

Our batter recipe (handed down from Mama Seal) was:
1pt milk
2 eggs
8 oz flour.

Mainly lime & sugar, but also had one with microwaved cherries, cherry marnier and a bit of single cream. :P

My yield was 9 tonight.

But they were bloody fantastic :thumbsup: (even though I say so myself).

Just had a rather belated pancake supper.  I've never really looked at a recipe for batter -- I pretty much do it by eye based on having watched my mother make it -- but not too far off Delia's.  The one unusual thing (also courtesy of my mother) is to add a little wholemeal flour.

Sugar and Lemon.  Maple Syrup.  Crème de Mûre.  Nom!

Used to have buckwheat pancakes in Poland. Thicker, grainier texture. Very tasty.
