A lot of the odder names are cider apples: Porter's Sheep Nose for example.  We have to find an apple we both like the taste of and one that will be pollinated by what is already adjacent.  Our ancient (pre-war) Bramley is pretty useless in that respect, but the crab apple might do, as might the neighbours' trees.

The Golden Knob is second-rate but a hardy and vigarous grower, producing enormous loads.

having just purchased a `Sunset` variety 2 year old tree from Orange Pippin Trees http://www.orangepippintrees.co.uk/inforequest.aspx I would very highly recommend their expert knowledge and customer care; just input location / climate / apple type and they`ll suggest appropriate ones.  :thumbsup:

....after the `tarte de pommes`, and  fortified by a couple of shots of limoncellos,  I flew up the Col de Bavella whilst thunderstorms rolled around the peaks above

Yes I`d have liked buy locally but suspect that eg Wyevale in Hereford wouldn`t have the range that Orange Pippin do, and although Hereford is just 30 miles away we`re 200m higher (ie about a month either end less growing season!)  with about 50% more rainfall, so what might be a happy chappy local variety for Hereford would be a bit dismal here. OP though seemed to have a wide range for differing climates.
