The inventor of Nouvelle Cuisine has gone to that Great Chippie in the Sky.

Our plates shrank in anguish.

My dad was a fan of his. Some of the recipes in the cookbook my day had were interesting - "take 12 chickens.."

The inventor of Nouvelle Cuisine ...

Nouvelle Cuisine = Pay more, get less food!

Anyway, RIP, Mr Bocuse.

Nouvelle cuisine is a much misunderstood term. It’s about lighter cooking (as in fewer heavy sauces, shorter cooking times), and a greater emphasis on presentation but not necessarily smaller portions.

Bocuse was part of a genuine revolution that has had a lasting impact on gastronomy. For the better, in my view.

I understand he could be quite rude about 'nouvelle cuisine' which left diners hungry.
