Libre Office 5 - Help please.

OK, possibly the same underlying problem but multiple issues.

I have used MS Office and Open Office extensively and have always been able to set defaults such as font, font size and document types by default.  I have recently moved to Libre Office as I have read that Open Office is no longer being well supported.  It's slightly different but nothing major except that I cannot find the place in the menus to set my defaults.   

I'm using Libre Office 5.  Can anybody help please?   Online help seems crap as I don't have the menu options it states.

Set the options you want, then save it as a template. On File menu > Template > Save as template. And tick the box for "Set as default template".
